Romanesco

Romanesco is a variety of Italian green cabbage that is part of the cruciferous family. It is a vegetable typically seen during the winter months and has a striking lime green colour. Its appearance is very characteristic, as the clusters of flowers are grouped together and form conical structures. Romanesco is a source of fibre, vitamin C, provitamin A, calcium, potassium, folic acid, and phosphorus. It is also known for its diuretic and anti-cancer properties.

It can be eaten in different ways: cooked, steamed, in soups and smoothies as well as raw in salads. It is highly recommended for weight-loss diets.

Romanesco was first documented in Italy in the 16th century.

Spain harvests around 30% of the total volume grown in Europe.

This vegetable draws attention because of the way it looks – an image of nature that follows geometric shapes.

When to eat it

Romanesco is considered a winter vegetable, and is generally available from September to April.
