Cauliflower Tartare with Leche de Tigre

Ingredients for 4 people:

Ingredients:

• ½ raw cauliflower
• ½ mango
• ¼ red onion
• Fresh cilantro

For the leche de tigre:

• Juice of 1 lime
• A little grated ginger
• 1 garlic clove, minced
• 2 tablespoons coconut milk
• 1 tablespoon oil
• Salt

For garnish:

• Grated coconut

Preparation:

  1. Grate and mix the cauliflower with the mango, red onion, and finely chopped cilantro.
  2. In a separate bowl, mix all the leche de tigre ingredients until you obtain a smooth sauce.
  3. Serve the cauliflower tartare using a round plating ring, drizzle with the leche de tigre, and carefully remove the ring.
  4. Garnish with grated coconut and serve with crackers or toast.
